Crockpot Recipes


Pineapple Cranberry Ham
1 boneless fully cooked ham or half-ham
1 cup jellied cranberry sauce
1/2 cup undrained crushed pineapple
1/4 cup brown sugar
1/4 teaspoon ground cloves

Score the ham in a diamond pattern on top and place in crockpot. In a small bowl, mash the cranberry sauce; stir in the remaining ingredients. Pour sauce over the ham, cook on low 4-5 hours.

Ranch Pork Roast
2 1/2 -3 lb boneless pork shoulder
1 lb new potatoes, halved
1 can cream of chicken soup
8 oz cream cheese, cubed, softened
1 pkg powdered ranch dressing mix

Trim fat from the roast. Brown on all sides in a little oil. Place potatoes in crockpot. Place roast on top. Mix all other ingredients. Pour over roast. Cook on low 9-10 hr or high 4 1/2 to 5 hr.

Slow Cooker Beef & Gravy
1-2 lb. beef (round steak, roast, etc.)
2 cans cream of mushroom soup
1/2 soup can each milk and water
1/4 c. flour
1/2 lb fresh mushrooms, sliced
butter

Slice beef into small chunks. Coat the meat pieces with flour and then brown with butter in a skillet. Transfer the meat to the crock pot. Place the mushrooms on top of the meat. Mix together the soup, milk and water. Spread soup mixture over the meat. Cook on low all day or high for 3-4 hours. Serve over cooked egg noodles. Serves 4.

Tangy Pork Roast
1 large onion, sliced
3 large potatoes, sliced
1/2 pkg baby carrots
2 1/2 pounds boneless pork loin roast
1 cup hot water
1/4 cup white sugar
3 tablespoons red wine vinegar
3 tablespoons soy sauce
2 tablespoon ketchup
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 dash hot pepper sauce, or to taste

Arrange onion slices evenly over the bottom of the slow cooker. Place potatoes on top of onion. Pierce the roast all over with a fork and place the roast on top of the potatoes. Arrange the baby carrots around the roast. In a bowl, mix together water, sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, and hot sauce; pour over roast. Cover, and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.

Sweet and Tangy Kielbasa
2 rings of kielbasa
1 jar of grape jelly
1 bottle of any ketchup

Mix grape jelly with ketchup in crockpot. Slice the kielbasa about a fourth of an inch thick and place it into crockpot. Then mix all ingredients together. Cook on low for about 4 hours.



Barbeque Cola Chuck Roast on Buns
2 1/2 pounds boneless chuck roast
2 onions, chopped
12 ounces Cola
1/3 cup Worcestershire sauce
1 1/2 Tbsp apple cider vinegar
1 1/2 tsp beef bouillon granules
3/4 tsp dry mustard or regular mustard
3/4 tsp chili powder
3 cloves garlic or garlic powder
1 cup ketchup
1 Tbsp butter or margarine

Place roast in 3 1/2-4-quart cup slow cooker. Add onion. Combine cola, Worcestershire sauce, vinegar, bouillon granules, mustard, chili powder and garlic. Save 1 cup Sauce, cover and refrigerate. Pour remaining sauce over roast. Cover and cook high 6 hours, or low 9 hours. Shred meat with forks. Combine reserved sauce, ketchup and butter in saucepan; cook over med. heat stirring constantly, until heated through. Pour over shredded meat and onions or add it to the rest of the sauce that you cooked the beef in. Serve on buns.

Crockpot Salsbury Steak
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1/4 cup milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water

In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties. Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Yummy Slow Cooker Chicken
1 (3 pound) whole chicken, skin removed
1/2 cup chicken broth
1/3 cup soy sauce
1/3 cup olive oil
1/4 cup honey
1 teaspoon Worcestershire sauce
2 teaspoons balsamic vinegar
2 teaspoons lemon juice
1 teaspoon sesame oil
2 tablespoons minced garlic

Remove skin from chicken, and empty inner cavity. Pat chicken dry with a paper towel, and place inside the slow cooker. In a bowl, stir together the chicken broth, soy sauce, olive oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil, and minced garlic. Pour mixture over chicken, and cover. Cook chicken on low setting for 8 hours, or 4 hours on high setting.

Spicy Beef Roast in Crockpot
3 pound round tip roast
6 small-medium red potatoes, quartered
1 to 2 tablespoons cracked black peppercorns
2 cloves garlic, minced
3 tablespoons balsamic vinegar
4 tablespoons reduced-sodium soy sauce
2 tablespoons Worcestershire sauce
2 teaspoons dry mustard

Rub cracked pepper and minced garlic onto roast. Put roast in Crock-Pot. Make several shallow slits in top of roast. Spread potatoes around the base of the roast. In a small bowl, combine remaining ingredients and pour over meat. Cover; cook on Low 8 to 10 hours (High: 4 to 5 hours). Makes 12 servings.

Slow Cooker Chops
1/4 Cup olive oil
1 Cup chicken broth
2 cloves garlic, minced
1 Tablespoon paprika
1 Tablespoon garlic powder
1 Tablespoon poultry seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
4 boneless pork chops
Salt and pepper to taste
3-4 medium red potatoes

Mix together the first 8 ingredients. Salt and pepper the pork chops, place in crock pot. Top with cubed red potatoes (leave the skin on if desired). Pour the sauce over the chops and potatoes. Cook on high 4 hours. 4 servings.

Slow Cooker Orange Chicken
8 small boneless, skinless chicken thighs
3 Tbsp flour
1/3 cup orange marmalade
1/3 cup barbecue sauce
2 Tbsp soy sauce
1 Tbsp grated fresh gingerroot

Toss chicken with flour in slow cooker. Mix remaining ingredients and pour over chicken. Cover, cook on low for 6-8 hours or high 3-4 hours. Serve with hot cooked rice. 4 servings.

Crockpot Brown Sugar Pork Loin Roast
1 boneless pork loin roast, 4 to 6 pounds
1 clove garlic, halved
salt and pepper
1 1/3 cups brown sugar, divided
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
1/4 teaspoon cinnamon

Rub pork with garlic halves. Sprinkle with salt and pepper, then prick the roast all over with a fork or skewer. In a cup or bowl, combine 1 cup of the brown sugar, the mustard, and vinegar. Rub all over the roast. Cover and cook on LOW for 7 hours. Pour off the excess juices, save to make gravy for another meal. Combine the remaining 1/3 cup brown sugar with cinnamon; Spread the mixture over the top of the roast. Cover and continue cooking on LOW for 1 hour longer. Serves 6 to 8.

Breakfast Bake
3 - 4 cups diced crusty bread (3/4 - 1 inch dice)
1/2 pound bacon, cut into 1/2 inch dice
2 cups sliced mushrooms
2 cups sliced fresh spinach
8 eggs
1/2 cup milk
3/4 cup roasted red peppers, drained and chopped
1 cup shredded cheese, such as cheddar or Monterey jack
Salt and pepper

Spray the inside of the slow cooker with non-stick spray. Pour bread into bottom of the slow cooker. Heat a sauté pan on medium heat and cook bacon until crispy. Remove all but 1 tablespoon of grease. Add mushrooms and spinach and toss to coat. Cook for 1-2 minutes, until spinach wilts. In a separate bowl, beat eggs and milk. Add remaining ingredients and blend. Pour into slow cooker. Cook on low for 2 1/2 hours, until eggs are firm but still moist.

Fruity Granola Oatmeal
1 1/4 cup old fashioned oats (not quick cooking)
1 cup plain, cinnamon, or apple granola
2 cups milk, plus more if desired for serving
1 cup water
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup apples, peeled, cored, and chopped into 1 inch cubes
1/4 cup pears, peeled, cored, and chopped into 1 inch cubes
1/4 cup walnuts, toasted
1/4 cup maple syrup or brown sugar (optional)

Grease slow cooker bowl with cooking spray or butter. Add oats, granola, milk, water, salt, cinnamon, and fruit to the slow cooker. Gently stir ingredients. Cover and cook on Low for 7-9 hours or High 2-3 hours. On a large baking sheet, toast walnuts on top rack of the broiler for about 4 minutes. Turn frequently. Add walnuts. Spoon oatmeal into individual bowls and serve hot. Pass additional milk, maple syrup and brown sugar if desired.

Corned Beef and Cabbage
16 new potatoes, quartered
6 carrots, sliced
6 pound corned beef brisket
3 onions, sliced
3 bay leaves
10 black peppercorns
Water to cover
2 small heads cabbage, wedged or cut to fit

Place potatoes and carrots in bottom of slow cooker. Add brisket, onion, bay leaves and peppercorns. Add enough water to cover. Cover, and cook on Low for 8-10 hours or on High for 4-5 hours. Add cabbage halfway through cooking.

Chicken and Mushroom Fettucccini Alfredo

1 1/2 pounds chicken breast tenders
2 packages (8 ounces each) cremini mushrooms, cut into thirds
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 packages (8 ounces each) cream cheese, cut into chunks
1 cup (2 sticks) butter, cut into pieces
1 1/2 cups grated Parmesan cheese, plus additional for garnish
1 1/2 cups whole milk
1 package (1 pound) fettuccini

Spray inside of 5-quart slow cooker with nonstick cooking spray. Arrange chicken in single layer in bottom of slow cooker. Top with mushrooms. Sprinkle salt, black pepper and garlic powder over mushrooms. Stir together cream cheese, butter, Parmesan cheese and milk in medium saucepan over medium heat. Whisk constantly until smooth and heated through. Pour over mushrooms, pushing down any that float to surface. Cover and cook on LOW 4 to 5 hours or on HIGH 2 to 2 1/2 hours.

Crockpot Pizza Casserole
8 ounces pasta such as penne, rotini or elbow macaroni
1 pound lean ground beef
1 onion, chopped
2 (15-ounce) cans pizza sauce
8 ounces pepperoni, sliced
1 (4-ounce) can mushrooms, sliced
1/2 (15-ounce) can black olives, sliced

Prepare macaroni according to package directions; drain. Meanwhile brown ground beef and onion in a large skillet, stirring until the beef is crumbly and browned; drain. Stir in pizza sauce, drained macaroni, pepperoni and mushrooms and olives. Place in a crockpot or slow cooker; cook on low 3 hours. Serve hot.

Lemon Herb Chicken Thighs

8 skinless, boneless chicken thighs
1 can golden mushroom soup
8 oz tub cream cheese
1/2 cup dry white wine
1/2 tsp lemon peel
1 tsp thyme
1 cup hot cooked pasta

Place chicken in crockpot. Mix remaining ingredients, pour over chicken. Cook on low 7-8 hours. Skim fat. Serve over noodles.

Pork Roast with Apricot Glaze

3-3/12 lb pork shoulder, boneless
18 oz jar apricot preserves
1/2 cup chicken broth 2 Tbsp dijon mustard

Trim fat from meat, place in crockpot. Combine remaining ingredients, pour over roast. Cook on low 10-12 hours or high 5-6 hours. Serve with cooked rice.

Ham Broccoli Casserole in Crockpot
1 16 oz pkg frozen broccoli, thawed
3 cups cubed ham
1 can cream of mushroom soup
1 8 oz jar cheese sauce
1 cup milk
1 cup uncooked instant rice

Combine broccoli and ham. Combine the rest of ingredients, stir into ham mixture. Place in greased crock pot, cook on low 4-5 hours.

Easy Crock Pot Beef Stew
2 pounds stew beef
4 medium potatoes, peeled and cut into 1/2 inch cubes
3 carrots, peeled and sliced
1 lb sliced fresh mushrooms
1 onion, peeled and chopped
1 envelope brown gravy mix
1 envelope onion soup mix
3 cups water

Spray the crock pot with a vegetable cooking spray. Place the vegetables in the crock pot. Top with the beef. Mix the water, brown gravy mix and onion soup mix. Pour mixture over the beef. Cover and cook on low for 9 - 10 hours or until the vegetables are tender. Serves 8 - 10

Hamburger Casserole
2 lbs. browned ground beef
3 carrots, peeled and sliced
2 onions, sliced
4 potatoes, peeled and sliced
1 can peas, drained
2 stalks celery, diced
1 can cream of chicken soup
1 can water

Place potatoes in bottom of crockpot, top with carrots and other vegetables. Place ground beef on top. Combine soup and water and pour over ground beef. Cover and cook on low for 6 to 8 hours. 6 servings

Swiss Chicken Cassserole
6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted

Lightly grease crock pot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix. Cook on low 8 to 10 hours or high 4 to 6 hours. Serves 6.

Farm Style Pork Chops
1/4 cup soy sauce
1/4 cup orange marmalade
2 Tbsp ketchup
1 garlic clove chopped
4 lb boneless pork chops
2 Tbsp flour

Combine 1st 4 ingredients, brush on both sides of pork chops. Place in crock, pur rest of sauce on. Cook 7 1/2 hr on los. Remove chops, add flour to sauce to thicken for gravy. Serve over hot cooked egg noodles.

Broccoli Cheese Soup
2 cups cooked noodles
1 10 oz pkg frozen chopped broccoli, thawed
1 Tbsp chopped onion
2 Tbsp butter
1Tbsp flour
2 cups cubed processed cheese
5 1/2 cups milk

Combine all ingredients in slow cooker, stir to blend. Cook on low 4 hours. 8 servings.
