Weekly Meal Plans
I have a core list of favorite family meals that I use as the basis of my own weekly meus. I keep the list as a Word document on my computer and a separate Excel file for my shopping list. When I make my weekly menu/shopping list, I choose some meals from my menu list and also throw in some other meals if I find a good recipe I want to try out.
I like to go through cookbooks and recipe magazines while I watch tv and keep the ones I like written down in my own recipe notebook and I use this to plan my meals along with my master menu list.
You can download the menu list and
shopping list that I use -(right-click, select "Save as.." ) Or just view the html Master Menu List here. You can use these or you can make up your own list of family favorite meals to use as your master meal planning list.
Then I look at the weekly grocery ads to find what is on sale and I also "shop" from my pantry and freezer to make up my menu each week. Sometimes I get ambitious and make a menu for 2 weeks at a time too. I try to keep my pantry well stocked with staple items so I can just shop for fresh items like meats, produce and dairy to complete my meals. Here is a pantry list you can use.
I also like to allow for a couple of days a month for takeout for when I'm way too tired to cook anything or if my son has his friend over and they only want pizza.
Tips and tricks
- I like to boil up about 3-5 pounds of hamburger meat all at once with some salt added to the water. Drain well, then crumble it up evenly and freeze in 1 pound packets to pull out and use when I make a meal that requires ground meat.

If I am planning on cooking a large piece of meat such as a ham or roast, I plan several meals around it to get a variety of uses during the week. Same with chicken, when I make grilled or broiled chicken breasts, I make extra to use in future meals.
- Use shortcuts if you are pressed for time. Bagged salad greens, canned vegetables, jarred or canned pasta sauces and gravies, pre-grated cheeses, refrigerated or frozen pasta, refrigerator doughs, prepared bread crumbs, and cut up veggies from a salad bar are all great shortcuts.

Potato Soup I make this in the crockpot--5 cups water, 5 to 6 medium potatoes cubed, a chicken bouillon cube, salt and pepper to taste. I usually add cubed ham and a can of mushrooms to this also. Cook on low for 6-8 hours, add a can of evaporated milk during the last 30 minutes and 2 T of butter or margarine.

Thursday 12/1/11 Ham & Egg "Thingies"
Spray a 12-hole muffin tin with cooking spray, place a thin round of sliced deli ham (or 2 pieces if it is thinner) in each tin to form a little cup. Beat 7-8 eggs with a little milk, salt and pepper. Pour the beaten eggs into the ham cups. Bake at 350 for 20 minutes. Serve with a side salad and dinner rolls.

Chicken Pot Pie Mix a can of mixed vegetables (the kind with cubed potatoes in it) a can of cream of mushroom or cream of chicken soup mixed with 3/4 can of milk, a small can of chicken, a can of mushrooms, salt and pepper to taste, warm this up in a bowl. Meanwhile, take a refrigerated ready made pie crust, lay out flat on a cookie sheet and cut into 4 wedges. Bake as directed. Spoon the warmed up vegetable/chicken mixture onto a plate, top with a wedge of crust. You have a chicken pot pie with a guaranteed crispy top crust. This is super easy to fix and I love the crust this way.

Warm up 1-2 cans of red kidney beans and drain most of the liquid off, pour the beans and some of the liquid over the rice and enjoy! Lots of fiber in this meal. Serve with side salad or vegetable.

Hawaiian Pork & Beans Pour 2-3 cans of pork and beans in a 9 x 13 " pan. Stir in 1/4 cup brown sugar and spread out evenly. Slice longways 2 cans of spam about 3/8" thick. Layer the spam slices with sliced pineapple so that they are standing up, at an angle on top of the beans. Push down into the beans so the slices are about half covered with beans. Bake at 350 for about 20-30 minutes until everything is heated through and bubbly.

Serve with crunchy taco shells or soft tortillas along with grated cheese, chopped tomatoes, lettuce, onions, black olives, jalapeno peppers and sour cream.

Sauté 1/2 head of coarsely shredded cabbage and 2-3 medium cubed potatoes in 2-3 T olive oil till tender, add 2 cups cubed ham. Pour in a can of chicken stock, 2 T Dijon mustard, 1/2 cup heavy cream, cook until warmed; take out a little of the liquid, add T cornstarch, stir to dissolve, add back to pot and cook until thickened.

Wednesday 9/7/11 Creamed Turkey Dice leftover turkey from Saturday. Make alfredo sauce, add turkey and green peas, stir until heated through. You can also just use Alfredo sauce from a jar to speed this up. Serve over buttered rice or egg noodles.

Broiled Tilapia Fillets Sprinkle fish with lemon pepper seasoning and salt before broiling. Serve with steamed baby yukon gold potatoes and steamed broccoli.

Pantry Potato Soup In a large pot, saute 1 to 1 1/2 cups of cubed ham (or Spam) in 2 T butter until lightly browned. If you like garlic, add a chopped clove of garlic to the ham. After the meat is browned, add 1 to 2 cans of cubed, cooked potatoes, drained, a can of cubed carrots, and a can of mushroom pieces, drained. Stir and cook briefly to warm up the vegetables. Add 1 to 2 cups of chicken broth depending on how thick you like it and how much vegetables you have used, and a can of evaporated milk. Cook, stirring until the liquid is heated and serve with crackers or some bread and butter.

Pizza Fun Buns Take hot dog buns and open them up flat, spread both sides with a little pizza sauce, top with pepperoni (or whatever pizza meat you like) and Mozzarella cheese, place under the broiler to warm up and melt the cheese, fold the buns back over to serve and eat them like hot dogs.

Dip cube steak in salted/peppered flour, fry in small amount of vegetable oil. When meat is done, top with a can of cream of mushroom soup mixed with a can of milk. Simmer until soup is heated. Serve over cooked rice and put some of the soup 'gravy' on the rice too. We also like to have canned green beans on the side and put some of the mushroom soup 'gravy' on the beans too. Yum!

Potato Soup
I make this in the crockpot--5 cups water, 5 to 6 medium potatoes cubed, a chicken bouillon cube, salt and pepper to taste. I usually add cubed ham and a can of mushrooms to this also. Cook on low for 6-8 hours, add a can of evaporated milk during the last 30 minutes and 2 T of butter or margarine. Serve with biscuits.

Fry up crumbled hamburger, drain off excess fat (all but about 2 T) add 3-4 T flour, stir to coat, then add milk slowly to make gravy, stir til thickened, season with salt and pepper to taste, serve over mashed potatoes (I use instant for a speedier meal). Serve with a side vegetable or salad.

I mix a can of mixed vegetables (the kind with cubed potatoes in it) a can of cream of mushroom or cream of chicken soup mixed with 3/4 can of milk, a small can of chicken, a can of mushrooms, salt and pepper to taste, warm this up in a bowl. Meanwhile, take a refrigerated ready made pie crust, lay out flat on a cookie sheet and cut into 4 wedges. Bake as directed. Spoon the warmed up vegetable/chicken mixture onto a plate, top with a wedge of crust. You have a chicken pot pie with a guaranteed crispy top crust. This is super easy to fix and I love the crust this way.
